We don’t want to encourage drinking in excess, but we do love this quick, simple and tasty Moretti Chicken recipe, that’s a one-pot hob-top wonder and great for a ‘dinner-a-la-one’ or to share with friends. Try it and feel free to send us your pictures!

Ingredients

Serves 2 people

πŸ§… 1 onion, peeled and chopped
🌿 1 tablespoon chopped fresh rosemary
πŸ«’ 2 tablespoons of olive oil
πŸ— 4 bone-in, skin-on chicken thighs
🍺 1 330ml bottle of Moretti lager (or any equivalent lager)
πŸ” 1 chicken stock cube
πŸ§‚ Salt and pepper

Serve with peas, fresh spring cabbage and Italian style roast potatoes. Maybe add a piece of crusty bread to soak up all those amazing juices.

Directions

Step 1
Put the onion and rosemary in a large shallow frying pan. Add the oil, season the onions with salt and pepper. Fry over a high heat for about 6 minutes or until softened and lightly golden, stirring occasionally. Add the chicken, skin-side down, and fry for about 8 minutes until starting to brown. Turn the chicken and fry for a further 3 minutes.

Step 2
Pour the beer over the chicken, crumbling in the stock cube and bring to the boil. Reduce the heat to medium, keep the pan uncovered and simmer for 10 minutes, stirring occasionally.

Step 3
Turn the chicken and cook for a further 10 minutes. Turn the chicken once more so the skin side is up, season with pepper and cook for a further 15 minutes or until cooked through.
